Base Recipe (Serves 4–5 people / about 12 medium pancakes):
Ingredients:
1 ½ cups all-purpose flour
2 tbsp sugar
1 tbsp baking powder
½ tsp salt
1 ¼ cups milk (dairy or non-dairy)
1 egg
3 tbsp melted butter or neutral oil
1 tsp vanilla extract
Optional add-ins:
Chocolate chips
Blueberries
Dash of cinnamon
Instructions:
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
Pour the wet ingredients into the dry and stir until just combined (a few lumps are okay!).
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or spray.
Pour or squeeze (using your ketchup bottle hack!) batter onto the pan.
Cook until bubbles form on the surface and edges look set, then flip and cook for another 1–2 minutes.
Serve with berries, syrup, or your favorite toppings.
To Scale for Different Families:
Family Size | Flour | Milk | Eggs | Yield |
2–3 people | ¾ cup | ½ cup | 1 | ~6 pancakes |
4–5 people | 1 ½ cups | 1 ¼ cups | 1 | ~12 pancakes |
6–8 people | 2 ¼ cups | 1 ¾ cups | 2 | ~18 pancakes |
10+ (freeze extras!) | 3 cups | 2 ½ cups | 2–3 | ~24 pancakes |
Tip: These pancakes freeze beautifully. Layer between wax paper and store in a freezer bag for quick weekday breakfasts—just pop in the toaster or microwave.
Happy Pancake Flipping! From our family to yours.
